Have been asked to help teach a BBQ cooking school.  South Florida, winter.  Well, the calendar says it's winter.  One of the best pro team cooking schools & they have competed nationally for years.  Am thinking about it since they drink a lot of bourbon when I have cooked with them in contests.

Got the last piece of my electric smoker this week. Itís a 12cuft convenience cooler that Iíve stripped all the refrigeration and electronics from. Whatís left is an insulated steel cabinet with a double pane tempered glass door. Iíve cut holes top and bottom for vents and holes for temp probe and power cord. I need to install the temperature controller and replace the door gasket with a ceramic fiber one and do a test burn. Iím using a 1,700w dual burner hot plate for heat. I hope thatís enough current to hold 180 degrees. My plan is to finish assembly today and do a temperature run up. I want to have smoked sausage for Easter. I have a pork belly and about 20lbs of Lake Ontario king salmon in the freezer already waiting. I bought the temp controller last week. This was the only real expense. Itís nice having this store 25 minutes away.

Yes. A dual burner inexpensive hot plate. Itís a commercial fridge commonly found at grocery check outs. Iíll take a couple picks when I get everything assembled.

Hereís the hotplate I ordered. Initially, I plan to cover it with a large baking sheet to prevent drippings from covering it and provide a surface for the wood chips to smolder. I was happy to open the back and see that I could remove the cord and pass it through a small hole in the chamber by just replacing a couple wire nuts.

Very cool, great plan, very economical for a large capacity smoker!  Thumbs Up    Wood chips in the pan may take care of the excess drippings, or consider a grease trap (in addition to the pan, drain the pan to a can or ??) to collect the drippings?

First test burn. Went from 50 to 190 degrees in 10 minutes. It hasnít  tripped the 27 year old GFI yet. 200 is the highest setpoint but the meat probe at the same height is reading 211 so I can confidently do Iski pepper beef sausage.  I have three sturdy shelves and 4 dowels for pretty much anything.
